Recipe of the Week-Roasted Garlic

Ingredients:

As many full bulbs as you like

Good quality olive oil

Preparation:

1. Preheat oven to 400 degrees. using a sharp knife, cut off the pointed end of the garlic bulb, exposing the flesh. Remove the loose papery skins but not all the skin. Arrange the bulbs in a shallow baking dish. Drizzle olive oil over each bulb. Bake uncovered for 25 minutes or until the bulbs appear soft and golden in color.

2. Remove from the oven and turn cooked bulbs over, flesh side down. This allows the cooked garlic flesh to absorb the olive oil.

To use:

Squeeze the soft garlic out of the skins once the bulbs have cooled down. Place cooked flesh in a small serving dish.

This nutritional powerhouse is an excellent alternative to fatty butter or margarine spreads.
